Tunisian Residential Architecture: Living Needs, Cultural Practice and Design Considerations for Contemporary Housing
A guide to vernacular spatial, climatic and social principles, and their application to medium-to-high density housing design in the Tunis region, illustrated with reference to Radès

1. Introduction and Scope
This guide draws together published academic and institutional research on Tunisian residential architecture and translates it into a set of concrete design considerations for contemporary housing. It is organised around one central idea: that privacy in the Tunisian house is best understood not as a wall but as a dual-circulation system, a territorial pattern that recurs, as a convergent response to climate, social structure and gender-differentiated use of space, across Amazigh, Punic, Roman, Islamic, Ottoman and French-Protectorate-era Tunisia. Throughout, "vernacular as spatial-organisational logic" is treated as distinct from "vernacular as ornament", and colonisation and modernisation are treated as continuity rather than rupture wherever the sources support that reading.
Seven thematic clusters follow: spatial organisation and the privacy gradient; cultural and social living practices; climate-responsive strategy; materials and construction; contemporary living needs and their divergence from the vernacular model; and agrarian household practices and the courtyard as a production space, added because a large proportion of Tunisian households are one or two generations removed from farming, which leaves a load-bearing, not merely incidental, mark on how the courtyard is used. Each section closes with numbered, actionable design considerations, continuous across the whole guide (1 to 31). A consolidated Design Considerations Checklist (Section 8) and a source-quality register (Section 9) follow, ahead of the Notes and Bibliography.
Where a housing scheme is used to illustrate how these principles might be applied at the scale of a real site, the example used throughout is a medium-to-high density housing scheme in Radès, a municipality in the Greater Tunis conurbation.
2. Spatial Organisation and the Privacy Gradient
2.1 The courtyard as organising device
The wast al-dar (also wast eddar), the central open courtyard, often with the sahn as its paved or planted core, is the near-universal organising device of the Tunisian house across regions and periods, from the medina dar to the Djerban houch to the Jerid oasis house to the Ibn Khaldoun social-housing units of 1974.¹ Rooms open inward onto the courtyard rather than outward to the street; the courtyard is simultaneously the light source, the ventilation source, the thermal buffer and the primary circulation space. This introversion is functional as much as it is climatic: it is the mechanism that allows a household to expose itself to daylight and air without exposing itself to the street.
In the Djerban houch, the same logic appears at the scale of the extended-family compound: two to four dwelling units (dar) face inward onto a shared courtyard with no windows to the outside, the whole thing nested inside a larger agricultural menzel and, at the next scale up, a lineage cluster (houma) of related menzels.² This nested structure is a useful precedent for medium-to-high density housing, because it demonstrates the courtyard logic operating at three nested scales simultaneously (unit, compound, neighbourhood), which is closer to what a density scheme needs than the single-family medina dar is on its own.
2.2 The entry sequence: skifa, driba, wast eddar
The threshold between public street and private household is not a single door but a choreographed sequence: the skifa, a bent or right-angled entry vestibule that breaks the sightline from street to courtyard; a transitional passage (driba) in larger houses; and only then the wast eddar itself.³ The bent entry is a device, not decoration: it exists specifically so that a visitor at the door cannot see into the courtyard, and by extension cannot see the women of the household, who work, sit and move through the courtyard in ordinary daily life. In Amazigh troglodyte and semi-troglodyte dwellings (Matmata), the same idea recurs as a stepped ramp descending into a below-grade courtyard, functionally producing the same break in sightline via section rather than plan.
2.3 Dual circulation as the privacy mechanism
The central finding of this guide is that privacy in the Tunisian house is not a wall: it is a dual-circulation system. Two paths exist that never intersect: the male or guest path, which terminates at a room close to the entry (historically a reception space analogous to, though not identical with, the wider Arab majlis/diwan tradition, a large, separately accessed room for receiving guests without them penetrating the household's private zone), and the family path, which continues past or around the reception zone into the courtyard and domestic rooms. This is achieved through three simultaneous mechanisms, not one:
- Spatial sequencing: the skifa/bent-entry device described above, plus a reception room positioned so a male guest need never cross the threshold into family space.
- Temporal scheduling: the same spaces used differently by gender and by time of day (the courtyard as women's workspace by day, as a shared family space by evening; the roof terrace as a female-dominated territory used for domestic labour, socialising with neighbouring households roof to roof, and sleeping in hot weather, used differently at different hours).
- Neighbourhood-scale height uniformity: a self-enforcing urban-scale privacy convention, in which roof terraces function as a female social realm specifically because neighbouring roofs are held to a consistent height, preventing overlook. This is a piece of the privacy system that lives outside the individual dwelling and cannot be reconstructed unit by unit; it has to be designed at the scale of the block or precinct.
The Bardo Palace's seraglio (women's quarters) sequence and the exhibition thesis of "la femme et le seuil" both treat the threshold (seuil) itself as the analytic unit, not the room, not the wall, but the moment of crossing, which is a useful conceptual frame: privacy is produced at thresholds, plural, distributed through the plan, rather than at a single perimeter.⁴
2.4 The roof terrace (stah/sath)
Flat roofs are near-universal and are not residual space: they function, by general description, as a distinct, actively used fourth facade, used for laundry and food-drying, as a sleeping space in summer, as a female-coded social space connecting to neighbouring roofs, and, in some contemporary examples, for informal commercial or leisure use. No source meeting this guide's sourcing standard was located for this specific claim, so it is offered as a working observation rather than a documented finding (see Section 9), and would benefit from further fieldwork or ethnographic verification.
Design Considerations: Spatial Organisation
- Any unit or block should preserve a bent or offset entry sequence, even a single ninety-degree turn between street door and the first shared or private space, rather than a straight sightline from corridor to living space.
- Dual circulation should be tested at three scales: within the unit (guest/family), within the building (visitor lobby versus resident circulation), and within the block (public street versus semi-private courtyard or mews accessible only to residents).
- Roof terraces are not amenity space to be value-engineered away: they carry specific, gendered social function and should be designed as usable, overlook-protected space, which has direct implications for building height stepping and parapet or screen design at the precinct scale.
- The Djerban houch/menzel/houma nested-scale model is a stronger precedent than the single medina dar for a medium-to-high density scheme, because it already solves the problem of stacking private courtyards inside a shared, family-managed envelope.
- Overlook control at neighbourhood scale (roofline discipline, sightline management between blocks) needs to be treated as a design parameter of the massing strategy, not an afterthought at unit-plan stage.
3. Cultural and Social Living Practices
3.1 Family structure and multigenerational living
Tunisian households frequently include cohabiting multiple generations, and even where generations live in separate dwellings, weekly gathering (commonly a Sunday family meal) is a strong, persistent norm; family decision-making is collective rather than individual.⁵ This has direct spatial implications distinct from a nuclear-family unit brief: circulation and room sizing need to accommodate periodic large-group gathering (extended family visiting, not just the resident household), which the single detached courtyard house solved by scale (a bigger house) but which a stacked apartment typology has to solve by shared or convertible communal space instead.
3.2 Hospitality and the guest-reception function
Hospitality, family cohesion and collective decision-making are documented as central organising norms of Tunisian domestic life.⁶ The specific etiquette of offering coffee or mint tea to visitors is a commonly reported practice, offered here as a general working observation rather than an academically sourced claim, since no strong source for that specific granular detail was located. The wider regional majlis tradition, a large room, separately accessed, furnished with floor seating and cushions, used for receiving guests, marking life events (weddings, condolence gatherings) and community discussion, is the formal architectural expression of this value, though the domestic Tunisian equivalent is typically a reception room off the entry sequence rather than a freestanding structure.⁷ The design implication is that the guest-reception function needs its own access route that does not require a visitor to enter family living space, echoing the dual-circulation logic described in Section 2.3.
3.3 Religious practice at home
Daily life is structured around the five daily prayers, audible via the call to prayer; observant households need at minimum a clean, appropriately oriented (qibla-facing) space for prayer, which need not be a dedicated room but is a real, recurring spatial requirement worth naming explicitly in a design brief.⁸ Ramadan restructures daily rhythm significantly: a Tunis-specific study of eighty-four adult residents found a marked intensification of domestic visiting during the month (rising from an average of 0.7 to 1.2 exchanges of visits per week), alongside shifted meal timing around the communal breaking of the fast (iftar) and altered consumption patterns.⁹ This argues for flexibility in shared or communal space use across the year rather than a single fixed programme, and for kitchen and dining capacity sized for periodic large gatherings rather than everyday minimums.
3.4 Life-cycle events: weddings and mourning
Tunisian weddings are, by general report, extended multi-day celebrations involving distinct ritual stages (contract-signing, henna ceremony, celebration), historically hosted partly or wholly within or immediately outside the family home. This is offered as a working observation rather than a cited fact, since no strong ethnographic source for this specific claim was located. The wider regional majlis/reception-room tradition, by contrast, is well documented as being tied to hosting both weddings and condolence gatherings in the same room type.¹⁰ This again supports designing convertible, larger-capacity shared space (whether at the unit or the block/cluster scale) rather than assuming reception needs scale to an everyday nuclear household.
3.5 Food preparation and the courtyard as workspace
Food preparation, and specifically the couscous tradition, is, by general description rather than by strong academic source, closely tied to courtyard and semi-outdoor space, with preparation commonly described as moving between indoor and outdoor zones depending on the task, weather and time of day. No strong source treating kitchen or food-preparation space as a distinct architectural topic was located, so this should be read as a working observation (see Section 9), though a related but distinct strand of the same question, seasonal food processing and preservation rather than everyday cooking, turns out to be far better evidenced (see Section 7.3).
Design Considerations: Cultural & Social Practice
- Guest reception needs a route into the scheme that never crosses the resident's private living space: this is the same dual-circulation requirement described in Section 2.3, restated at the scale of hospitality practice rather than gender-privacy alone.
- At least one room per unit, or one shared space per cluster, should be sized for periodic large-group use (extended family gathering, life-cycle events, Ramadan iftar), not sized to the resident household's daily headcount.
- A modest, flexible prayer space (orientation-aware, easily cleaned, not necessarily a dedicated room) should be an explicit line item in the brief rather than an implicit assumption.
- Kitchen and adjacent semi-outdoor space should support movement of food preparation between indoors and out, rather than treating the kitchen as a sealed internal box: this has implications for a kitchen's adjacency to a courtyard, balcony or loggia in a stacked typology.
- Communal or convertible space should be designed with awareness that its use pattern changes seasonally (Ramadan, evidenced directly in Section 3.3) and cyclically (life events), not just by time of day.
4. Climate-Responsive Strategy
4.1 The courtyard as thermal regulator
A 2026 systematic review of thirty peer-reviewed studies on passive cooling in arid urban environments confirms that high surrounding walls and a courtyard's own thermal mass produce a shaded microclimate by day and support radiative cooling at night, with courtyards, wind towers and thick masonry walls identified as consistently effective vernacular strategies across the Middle East, North Africa and South Asia.¹¹ A complementary computational fluid dynamics study of courtyard house design for hot, dry regions found that additional shading elements such as galleries can improve thermal performance by thirty to sixty per cent.¹²
4.2 Thermal mass and earth-coupling
Two distinct thermal-mass strategies recur: thick masonry walls (stone in the medina, brick in the Jerid, rammed earth or stone in the south) that slow heat transfer through the day and release it at night, and earth-coupling via subterranean or semi-subterranean construction, which uses stable subsurface temperature directly rather than relying on wall thickness alone. Matmata's troglodyte dwellings are the clearest Tunisian example of the latter strategy.¹³
4.3 Street-scale and neighbourhood-scale cooling
Passive cooling in hot, arid settlements more broadly is not only a building-scale strategy: narrow, shaded streets and covered passageways produce self-shading and channel airflow at the scale of the street network itself, a pattern documented in both the Tunis medina and the Jerid oasis towns.¹⁴ This is a strong argument for treating street width, orientation and shading at the masterplan scale as a climate strategy, not just facade design at the unit scale, which is directly relevant to a medium-to-high density scheme where block layout and street section are design variables under the designer's control.
4.4 Screened ventilation: mashrabiya-type lattices
Lattice screens (called mashrabiya in the wider region, present specifically in Tunisia and Malta as well as the Mashriq) serve a dual function: privacy, in that occupants can see out without being seen, and climate control, via graduated lattice-opening sizes that accelerate airflow near the top of a window and slow it near head height, avoiding uncomfortable draughts while still ventilating the room.¹⁵ Where the screen projects from the facade it also draws air from three sides regardless of prevailing wind direction, and a row of projecting screens along a street additionally provides pedestrian shade or shelter at street level. This is a rare case where a single vernacular element demonstrably serves the privacy and climate agendas simultaneously, and it is worth foregrounding as a paradigm case in any design process that reinterprets vernacular precedent.
4.5 Water management in arid zones
In the arid south, rainwater cisterns, small dams and terracing (the jessour system) capture and manage scarce rainwater and control soil erosion; this is water-scarcity infrastructure rather than domestic architecture as such, but the houch/menzel compound in Djerba integrates the same logic at the household scale via underground cisterns fed by courtyard or roof runoff.¹⁶
Design Considerations: Climate
- Street and block orientation and section should be treated as a primary climate-design lever at the masterplan scale, not only at the level of individual unit facades: narrow, shaded circulation between blocks is a legitimate design strategy, not merely a historical curiosity.
- Privacy screening and climate screening should be paired in the same architectural element wherever possible (mashrabiya-type lattices as the paradigm case) rather than solving privacy and ventilation with separate, additive systems.
- High-thermal-mass envelope construction should be specified, and partial earth-coupling or earth-sheltering considered where the site allows, rather than defaulting to lightweight contemporary construction.
- Rainwater capture (roof or courtyard collection to storage) should be integrated as a genuine design requirement, particularly where the scheme includes any shared courtyard or landscaped space: this is a legible, load-bearing vernacular precedent, not greenwashing.
- Courtyard water features, where included, should be justified climatically (evaporative cooling contribution) as well as socially and aesthetically.
5. Materials and Construction
5.1 Structural systems by region
Load-bearing masonry is the constant across the region, but the specific material shifts by area: limestone block in and around the Tunis medina; fired clay brick in the Jerid oasis towns (Tozeur, Nefta), whose ochre colour and geometric surface patterning is a genuine decorative-structural technique rather than applied ornament; rammed earth and dry stone in the ksour and ghorfa granary-village tradition of the south; and excavated soft limestone in Matmata's troglodyte dwellings.¹⁷ Roofs are either vaulted (brick or stone, sometimes domed) or flat, with timber joists carrying terracotta tile or slab construction; lime plaster is the near-universal finish, valued for both durability and the reflective whiteness that reduces solar heat gain.
5.2 The ghorfa tenure model
The ksar (fortified granary village) organises multiple vaulted storage cells (ghorfa, plural ghorfat) around a shared courtyard, historically for grain storage but also seasonal residence; ownership and use rights over individual ghorfa within a collectively managed envelope is a documented precedent for private units nested inside a collectively managed shared structure, directly relevant to a multi-unit housing scheme that needs a legible model for how private and shared ownership or management coexist physically.¹⁸ This tenure model is examined further, alongside the fuller storage hierarchy it belongs to, in Section 7.4.
5.3 Decorative vocabulary as structural byproduct
The Jerid brickwork pattern language (geometric coursing that projects or recedes) demonstrates that decoration can be generated by structural or constructional technique rather than added afterward, a materially honest precedent that supports a design approach where facade pattern-making is derived from construction logic (brick coursing, block coursing, vault geometry) rather than applied as surface treatment.¹⁹
Design Considerations: Materials
- A primary structural material (masonry or an equivalent high-mass contemporary system) should be selected, with facade patterning derived from its coursing or construction logic rather than treating decoration as a separate, applied layer.
- A light-reflective (light-coloured, high-albedo) exterior finish consistent with the lime-plaster precedent should be considered, particularly for high-exposure elevations.
- The ghorfa/ksar tenure model, private cells within a shared, collectively held envelope, is a stronger conceptual precedent than the single-owner medina dar for framing shared ownership or management structures in a multi-unit scheme (body-corporate or shared-courtyard governance, not just plan form).
- Where vaulting or domed roof construction is structurally and economically viable, its climate performance (thermal mass, self-shading form) is a legitimate justification independent of its historical or decorative associations.
6. Contemporary Living Needs and Divergence
6.1 Modernist reinterpretation precedents and their lessons
Bernard Zehrfuss's reconstruction-era work in Tunisia (1943 to 1948), including Cité El Omrane patio housing and the "maison minima" concept, is examined in detail in a 2025 study of the reconstruction team's housing typologies, which analyses how a minimalist, citational approach to vernacular architectural forms combined with a drive to transplant "modern lifestyles" came to dominate the team's collective building practice.²⁰ A companion study of the same team's serial housing production, and a further study focused specifically on courtyard housing built for displaced Muslim populations during the 1943 to 1955 reconstruction period, together give this precedent strong, complementary academic support.²¹ The basic housing cell (approximately ten metres) was repeated around a courtyard and was explicitly developed following research among the population it was designed to house, framing Tunisia as a testing ground in which Modern Movement theory was combined with vernacular typology and locally available materials.
Cité Ibn Khaldoun (1974), by contrast, is a well-established cautionary case: a pilot resettlement project of around 1,500 units (of a planned 5,100) for populations displaced from squatter settlements, offering two-to-five-room courtyard units in linear articulated blocks at roughly forty units per hectare, built in load-bearing brick and reinforced concrete with cement-plaster finish.²² The available documentation is programmatic and descriptive rather than critical, so the specific failure mode that makes this scheme cautionary rather than a clean success has not been established from the sources consulted for this guide; further documentary or fieldwork verification is needed before it is cited as cautionary without qualification (flagged as a gap in Section 9).
6.2 Housing quality and density pressure
A 2012 study of Tunisia's "quantity-quality mismatch" identifies a real, current tension for any density-focused proposal: housing adequacy indicators (secure tenure, water and sanitation access, structural quality, overcrowding) vary sharply between coastal or urban and inland or rural areas, and historical attempts to demolish informal settlements around Tunis in the 1960s and 1970s are documented to have increased population density elsewhere rather than resolving it.²³ UN-Habitat's 2019 Tunisia Urban Housing Sector Profile provides further institutional confirmation of this national-level policy context.²⁴ This matters directly for a Radès-type brief: a medium-to-high density scheme sits inside a national context where density increases have historically been a side-effect of failed policy rather than a deliberate design outcome, which is worth naming explicitly in any scope and limitations statement.
6.3 Gender-sensitive spatial planning today (Femmedina)
Femmedina, launched in 2020 in Tunis with USAID funding and later expanded to Sousse, Mahdia, Msaken and Kairouan with Swiss and Canadian support, and led locally by architect Narjes Riahi for the Municipality of Tunis, is a live, contemporary, participatory programme adapting public space to women's needs and safety through direct engagement with women in the medina and surrounding neighbourhoods.²⁵ Set against the material in Sections 2 and 3, Femmedina demonstrates that gender-sensitive spatial design is an active contemporary policy concern in Tunis, not a historical curiosity: it legitimises the privacy-gradient framework used throughout this guide as a live design question rather than a purely retrospective one, and provides a citable contemporary precedent operating at the public-realm scale to set alongside the domestic-scale precedents discussed above.
6.4 What has changed, and what has not
Drawing the threads together: the underlying need, some degree of gendered or graduated privacy control, hospitality capacity, multigenerational flexibility, passive climate response, persists in contemporary Tunis, but the household structure delivering it has shifted (smaller nuclear-family units are now common alongside multigenerational households; women's public-realm participation and paid work are now policy priorities in a way they were not historically), and the building form available to deliver it has shifted from the single detached courtyard house to the stacked apartment block. Closing this gap between an enduring underlying need and a changed building form is the central design problem this guide is intended to address.
Design Considerations: Contemporary Needs
- Density should be justified explicitly against the documented national pattern where density has historically resulted from failed rehousing policy: the design should read as a deliberate, well-resourced alternative to that pattern, not as an unexamined repetition of it.
- Zehrfuss's Cité El Omrane "maison minima" (repeated modular cell around a courtyard, research-informed design process) should be treated as the primary positive modern-vernacular precedent, drawing on the Gharbi and Demerdash, Gharbi, and Ben Abdelghani and Ammar studies as the core academic support.
- Cité Ibn Khaldoun should be treated as a cautionary precedent, but its specific failure mode has not been established from the sources consulted here: further verification is needed before it is cited as cautionary without qualification.
- Femmedina should be cited as evidence that gender-sensitive spatial design is a live Tunisian policy concern, strengthening the case for a privacy-gradient design approach against a charge that it is purely nostalgic.
- Any privacy/dual-circulation strategy needs to accommodate a genuine range of contemporary household types (nuclear, multigenerational, non-traditional) rather than assuming a single normative household structure throughout the scheme.
7. Agrarian Household Practices and Courtyard Production
Sections 2 to 6 treated the courtyard primarily as a climatic and privacy device. This section adds a third, load-bearing function that the sources make clear is not incidental: the courtyard as a production and processing space, tied to the fact that a large proportion of Tunisian households, including many now resident in Tunis and its suburbs, such as Radès, are one or two generations removed from a farming household, and in many cases still maintain some link to agricultural land, seasonal provisioning practice or extended family who farm.
This adds an economic-domestic function to the courtyard that is gender-inflected in its own right (harissa and oula-making is documented as women's communal work) but that is also a scheduling and storage problem, not only a sightline problem. A design that reduces the courtyard to a light-and-privacy device without accounting for its historical role as seasonal processing and storage infrastructure risks losing a genuinely load-bearing vernacular function, not just an ornamental one.
7.1 The farming household as a production unit
A 2017 ethnoarchaeological study conducted in two villages near Dahmani, inhabited by families of the Ouarten tribe who maintain traditional practices, gives a rare, methodologically rigorous, present-day description of a working Tunisian farming household's spatial organisation.²⁶ The household is not simply "a house with a courtyard": it typically comprises a main house for a nuclear family plus separate houses for married sons and their families, clustered around a central courtyard where varied daily activities are carried out, alongside a small vegetable back-garden, dedicated cooking and storage installations, and livestock pens. Subsistence is mixed farming, cereals plus sheep, goats and, less commonly, cattle, which the study frames as a deliberate risk-mitigation strategy: mixed crop-livestock systems let a household absorb a bad cereal year or a bad livestock year without total loss, and each subsystem can boost the other's productivity (manure for soil, crop residue for fodder).
This is a materially different model of "household" than either the single medina dar or the nuclear apartment unit: it is a multi-building, multi-generational compound organised around continuous productive courtyard use, closer in structure to the Djerban houch/menzel pattern documented in Section 2.1 than to a single dwelling. The implication for medium-to-high density housing is that "courtyard" in the vernacular sense was never purely a leisure or light-well amenity: it was zoned, on any given day, between cooking, processing, storage access and livestock management, in addition to the privacy and climate functions already documented in Sections 2 to 4.
7.2 The olive economy: harvest, pressing, curing, storage
Olive cultivation is central to Tunisian rural life and calendar, and the harvest is commonly reported as a communal, celebratory event. This specific description of harvest timing, technique and social framing is offered as a working observation rather than a citable academic claim, since no strong ethnographic source for it was located (see Section 9). Archaeological work continues to reveal the scale of Tunisia's olive-oil economy in antiquity: a joint excavation led by Ca' Foscari University of Venice, the Université de La Manouba, and the Universidad Complutense de Madrid identified what is reported as the second-largest known olive-oil production complex in the Roman Empire, at Henchir el Begar (ancient Saltus Beguensis) in Tunisia's Kasserine region, a monumental torcularium with twelve beam presses alongside cisterns and a water-collection basin, dated to the third to sixth centuries AD.²⁷ This confirms, at an academic standard, that industrial-scale olive pressing (the maasra) has historically operated at a larger-than-single-household scale (workshop, estate or village level) even where individual households handled their own curing and storage. The design implication is that a housing brief does not need to accommodate an actual oil press at the dwelling scale, since that function has historically been communal or institutional, but it does need to accommodate the household-scale tasks that come after pressing or alongside table-olive production: sorting, brining or curing, and storage.
Table olives specifically are cured at home via lacto-fermentation: washed olives are submerged in a sealed brine and left to ferment, a simple, low-technology process requiring only a stable, cool storage location and appropriate vessels, consistent with the broader pickling tradition (mixed pickled vegetables and pickled lemons) discussed further in Section 7.3.²⁸
7.3 El oula: the seasonal preservation complex
The single strongest, best-evidenced finding in this section is harissa and the wider el oula tradition it belongs to, and it is well evidenced precisely because it is now a UNESCO-recognised Intangible Cultural Heritage practice, inscribed in 2022, with a peer-reviewed academic literature of its own.²⁹ El oula, the household's summer-to-autumn stockpiling of provisions for the winter, is understood as a set of practices, sun-drying, salting, lacto-fermentation and pickling, applied across a wide range of produce: chili peppers for harissa, tomatoes, olives, lemons and mixed vegetables.³⁰ The UNESCO listing is explicit that it inscribes not just the paste but the techniques, the seasonal rhythm, the shared work and the knowledge passed from one generation to the next: the practice is understood by its own heritage body as inseparable from its spatial and social setting, not just its recipe.
The spatial description is specific and directly usable: in late September, long garlands of red chili peppers are strung to dry in the sun, hung from balconies, doorways and rooftops, while in courtyards, women gather in small groups working through piles of chilies, garlic and spices, grinding them into paste before storing the result in glass or pottery.³¹ This is documented as usually prepared by women in a convivial and festive family or neighbourhood setting: it is simultaneously a private household task and a semi-public, cross-household social event, which sits directly alongside the roof-terrace and courtyard gender-space findings of Sections 2.3 to 2.4 rather than complicating them.
7.4 The storage hierarchy: from room, to jar, to pit, to granary
The sources reveal a genuine scalar hierarchy of storage architecture, worth naming explicitly because it maps cleanly onto a design hierarchy of private, shared and collective space:
- Room scale: the bit el-mouna, a dedicated pantry room within the house, said to store dried couscous and other provisions in cloth bags, the mouna itself being the raw materials that households prepare across summer for winter consumption. This description is offered as a working observation rather than a citable academic claim, since no strong source naming or describing this specific room type was located, though the underlying practice of seasonal provisioning is well corroborated at the level of the household economy (Section 7.3). It is nonetheless a distinct, nameable room type that the spatial-typology discussion in Section 2 does not include and that could usefully be added to a housing brief that takes the vernacular precedent seriously.
- Vessel scale: the khabia, a large earthenware jar for oil, wine or grain, historically produced in regional pottery centres, larger examples from Djerba, smaller from Nabeul, stored within the bit el-mouna or courtyard-adjacent space.³²
- Pit scale: the matmora, a subterranean silo-pit whose thermal and storage mechanics (a sealed, low-oxygen environment in which an outer crust of fermented grain protects the remaining cache from temperature swings, pests and spoilage, and which can also be concealed against fire, theft or taxation) are well established in the comparative underground-storage literature.³³ This is a household- or family-plot-scale storage solution, distinct from both the room-scale bit el-mouna and the collective granary below.
- Collective or settlement scale: the ghorfa-within-ksar system (Section 5.2), stacked vaulted storage cells arranged around a shared clearing or courtyard, historically storing olive oil, barley and wheat, and functioning as something close to a communal bank. In the Chenini and Douiret hilltop tradition specifically, granaries were sited defensively on high ground, physically separated from the residential settlement below, precisely because collective food storage was too valuable and too vulnerable to keep inside individual houses. This region, the ghorfa/ksar granary villages of Medenine and Tataouine, is the subject of a dedicated academic field survey.³⁴
7.5 Date-palm oases: water, wealth and the multistorey storage dwelling
In the Jerid, a name that itself derives from the Arabic word for palm frond, the oasis settlement pattern is defined by its irrigation system: the complex water-distribution network developed to sustain date-palm cultivation directly defined settlement boundaries and is described in the specialist literature as the foundation of the region's wealth.³⁵ Household architecture is described in the same literature as responding directly to this economy: houses are reported to be frequently multistorey, serving simultaneously as shelter and storage, with whitewashed interiors, dirt floors and flat earthen roofs carried on palm-wood beams and woven palm-mat substrate, the dominant local building material, palm, doubling as the dominant agricultural product. Palm products are similarly reported as being used for fencing, pottery-kiln structures, and palm-trunk-and-frond shade structures over courtyards and work-yards, a plausible, materially specific precedent for courtyard shade structures built from a by-product of the household's own agricultural output rather than an imported material. These specific architectural descriptions are offered as working observations pending full-text confirmation of the source cited, which was available only at conference-abstract level.
7.6 Livestock, fuel and deep-time continuity
The same 2017 ethnoarchaeological study (Section 7.1) that documents contemporary courtyard household structure also makes an unusually strong historical-continuity argument: dung fuel use, sourced from household livestock and processed, collected, dried and stored via courtyard-adjacent installations, is evidenced not only in the present-day villages studied but via phytolith and microfossil analysis back to the Early Numidian occupation phase, the tenth to ninth century BC, at a nearby site.³⁶ This is a rare case in which a specific domestic-courtyard practice is verified as continuous across roughly three thousand years in the same region, rather than merely analogous, and it is a strong, citable example of privacy and climate-responsive spatial logic as a territorial pattern rather than a single transmitted tradition, since it shows genuine practice continuity rather than a claimed but unverified lineage.
Design Considerations: Agrarian Courtyard Practice
- The bit el-mouna (household provisions room) should be added as a named, distinct room type in a housing brief, not folded into "kitchen" or "storage" generically, but sized and located as its own function, ideally with courtyard or semi-outdoor access for loading and unloading bulky seasonal provisions.
- Shared, secured storage space should be provided at the building or cluster scale, modelled conceptually on the ghorfa/ksar collective-granary register, a physical answer to the historical fact that Tunisian storage was never solved at the single-household scale alone.
- At least part of the courtyard or shared-outdoor programme should be designed around seasonal, high-intensity, communal processing use (the el oula/harissa-making pattern: groups working together on a bulk task over a period of days in early autumn), rather than assuming courtyards are used at a constant, low-intensity, everyday rate year-round.
- Legitimate sun-drying infrastructure (rooftop, balcony or courtyard-edge racks or lines suited to hanging chilies, herbs or laundry) should be provided as a named design element, consistent with the documented el oula practice, a low-cost, high-cultural-legitimacy design gesture directly supported by UNESCO-level heritage documentation.
- Where courtyard shade structures are used, a locally legible material precedent (lattice or frame-and-frond logic, even if translated into a contemporary material) should be considered as an echo of the oasis palm-frame precedent, rather than defaulting to a generic pergola.
- The courtyard's processing and storage function should be treated as schedule-driven and seasonal (olive harvest in autumn and winter; el oula preservation in late summer and early autumn) alongside its daily privacy and climate function: a scheme that only tests courtyard performance against an "average day" will miss this load-bearing peak-use case.
- Any scope and limitations statement should note explicitly that agricultural production itself is not being proposed for a medium-to-high density scheme: the transferable principle is the spatial logic (distributed storage registers, seasonal processing capacity, courtyard as flexible production space), not the literal reintroduction of agricultural production into an urban housing block.
